From tomatoes to small fruits: how to measure firmness

Small fruits such as blueberries, cherries, strawberries, and tomatoes: measuring their firmness is essential to assess the right harvesting time. "As the products are sold at a considerable price per kg, they must reach the market at the right ripening stage to please consumers. Firmness is an important quality indicator, as most consumers appreciate crunchiness," explains Enrico Turoni from TR Turoni.

TR Turoni produces a series of digital durometers that help measure the firmness of cherries and blueberries simply and quickly. The tool simulates the pressure of a finger without breaking or penetrating the fruit and shows the value.

"The tool makes it possible to assess the firmness of the flesh of some fruits in a quick, precise, and non-invasive manner. It is very important to monitor such index, as it has direct repercussions on shelf-life."

The main characteristic of these types of instruments is the fact that they do not destroy the fruit that is being measured, unlike a penetrometer.
