Switzerland: High degree of self-sufficiency for popular lamb's lettuce

Over 40 percent grown in greenhouses

In Switzerland, lamb's lettuce is one of the most popular winter salads and, fortunately, the majority of the greens sold are grown domestically. Swiss vegetable producers grow lamb's lettuce all year round. The hardy lettuce can withstand temperatures as low as -15 degrees.

For vegetable growers, lamb's lettuce is an important crop: in 2021, it was second only to lettuce, with sales of just under CHF 70 million. Now, there are 540 hectares of lamb's lettuce in this country, of which slightly more than 20 percent is produced organically. Of the total production, about 42 percent of the vegetable is grown in greenhouses.
