Small drops of pesto from Genoa

Pesto di Prà is not a basil pesto that goes unnoticed thanks to its distinctive characteristic - no compromises are made when it comes to the quality of raw materials, meaning costs are not taken into consideration. The seven ingredients, all rigorously of Italian origin, emanate the aromas and flavors reminiscent of the best farming tradition as soon as a jar is opened. Of course basil is the main ingredient, enhanced with pine nuts, extra-virgin olive oil, Grana Padano, pecorino cheese, parmesan cheese, sea salt and Italian garlic.

FreshPlaza talked about Pesto di Pra' with Stefano Bruzzone, who manages the brand together with the Ferrari family, which has been producing pesto for five generations from the selection of seeds to commercialization.

“This has been an excellent year for basil in Genoa. We grow it on 11,000 sq m in total, 80% of which are protected crops, the rest are open fields. It rained very little, so yields and volumes are above average with an excellent quality and a persistent aroma and flavor," stressed Stefano Buzzone.

In addition to the typical pesto from Genoa, prepared according to the traditional recipe, the product range also includes pesto without garlic, walnut sauce and red basil pesto, which combines the Ligurian and Sicilian traditions. Products need to be in the cold chain, meaning they must be stored at 0-4°C. The fact that the pesto is fresh means it is not pasteurized and is therefore processed raw, as the hot temperatures would change its flavor, color and aroma. This is why consumers who care about the channeled system are willing to pay €3 for 90 grams of product."  

“In order to strengthen our exports, as we have a small market share in France, Germany and the US, we have recently introduced a new product that does not 'fear' the usual 30/35 days of shelf life or 2/3 days for fresh basil. I am talking about the drops of frozen pesto - 15 grams of goodness in which we have enclosed the unmistakable aroma of our prestigious basil combined with top-level ingredients. Our artisanal pesto therefore meets the innovation that are frozen products, maintaining its organoleptic qualities and freshness unaltered combining them with practicality." 

The innovative Pesto in Gocce format is available in the retail chain in the 180 gram format (12 15g drops) so as to avoid waste. It is perfect for multiple uses: as a pasta condiment, on pizzas or gourmet meals or even in soups. It is a versatile product that provides a great service to clients.

“2022 will be the year of the green revolution, because we are planning on further reducing the use of plastic in packaging and on making full use of renewable energy sources. What have we learned from our Italian and foreign competitors? Well... the world is full of companies making pesto! But the point of strength of our products is our closed channeling system. Of course we need to learn how to promote our product and enhance it, which is true for all local products." 

"The sales channel of reference for Il Pesto di Pra' is the big retail chain, but we also have products suitable for the food service sector in 1 or 5 kg formats. E-commerce has also grown a lot during lockdown. During this 'recovery' period, sales to the H&R channel have grown by double digits, as the sector is getting back to its feed after the forced stop caused by the pandemic."
