Rhinelanders use the word "Kappes" to refer to head cabbage, especially white and red cabbage. White cabbage is grown on an area of more than 850 ha and red cabbage on more than 500 ha. A large part of this area is used for processing into sauerkraut, coleslaw or red cabbage in jars or foil bags. But large areas are also cultivated for the fresh market. It is clear that "Kappes" plays a big role in the Rhineland.
Certainly in the fall or winter months, white cabbage and sauerkraut are recommended. They contain a lot of vitamin C, vitamin B and K as well as the minerals potassium, calcium, iron and also a high proportion of dietary fiber. The vitamin and mineral content strengthens the immune system, protecting against colds.
