"Our sweet jams are composed of only two ingredients - fruit and sugar. We buy Italian fruit at the right degree of ripeness, therefore with characteristics suitable for the fresh market, fully aware that using fruit that is too ripe - especially when cooking it - leads to the alteration of optimal acidity levels, with poor results in terms of taste and preservation of the finished product," said Federico Marinelli, owner of the Tuscan company Pure Stagioni.
Jams and marmalades with and without sugar for sweet and savory pairings are available in convenient and practical metal jars, with an eye-catching and environmentally sustainable iconic design. A small aluminum container that, unlike glass, ensures better preservation of the product, as the freshness, flavor and aromas of the fruit are best preserved away from light.
Pure Stagioni is a Tuscany-based company of high-end processed foods, whose sweet and savory productions are destined for international luxury food channels. These are extra jams of freshly processed selected fruits, with exclusive recipes proposed in special packaging, without preservatives, pectins and acidity correctors.
The amount of fruit is indicated on the package, ranging from 90 to 130 g of fruit for every 100 g of finished product, making up the range of classic flavors.
The line includes strawberry, blueberry, blackberry, apricot, fig, red currant, lemon and orange jams in 45- and 200-gram sizes, plus cocoa combined with Tuscan chestnuts. These references are complemented by a line explicitly designed for savory pairings, such as spicy Tomato jam, spicy Peach jam, Chili jam and Onion jam. They make perfect pairings for cheeses, tartare, roasted meats.
"Among the top products are the Strawberry and Raspberry jam with and without sugar. Blueberry, being a superfood, is in great demand, especially in the sugar-free variant. We process a wild species of black-fleshed blueberry (Vaccinium Myrtillus L.) typical of the mountains of the Tuscan-Emilian Apennines. It's a fruit highly valued for its organoleptic characteristics and high content in antioxidants, polyphenols and anthocyanins."
The fruits are processed with the most modern technologies so as to best preserve all the key organoleptic characteristics. In the processing process, the fruit is handled as little as possible to protect its integrity, especially in the cooking stage, which takes place at high pressure and low temperature to preserve its color, texture and all genuine organoleptic properties.
"Both in Italy and abroad, customers pay attention to the quality/price ratio, although outside the borders customers are less traditional and more inclined to include innovative products. This is the case with Pure Stagioni, meaning that the particular packaging of our processed products disrupts the imagery of classic glass jams. We have also had requests for standard glass products, but we do not know whether to make them part of our offer."
"On the commercial front, the pandemic has not only accelerated online sales but, in our case, this commercial channel has allowed us to notice more immediately in which direction consumers' tastes and needs are heading, compared to traditional sales. More specifically, the strong focus on sugar and the interest of consumers in products that either do not contain it or have reduced it," concluded Federico Marinelli.
Branded products can be found all over Italy, particularly in Tuscany, in selected gourmet boutiques, specialty stores, and various online platforms. As for exports, Pure Stagioni is present in Canada and the United States with 50 percent of the company's sales.
